Would be a multi-layered system, to include a trained adult German Shepherd Dog (my Welsh Corgi is a fantastic alarm system, but he'd rather fetch a tennis ball and roll over at your feet than do anybody any bodily harm), plus various weapons stashed about the house in secret nooks and crannies, such as knives, staffs, bats, maybe even a spear for maintaining distance while the German Shepherd chews on them. I'd probably keep a 6" fixed blade beside the bed.
Personal Carry:
The longest fixed blade I could legally conceal on my strong side belt, a spring-assisted or auto (legal here in Oregon) folder clipped on my weak side pocket, and maybe a small can of Fox Labs pepper spray. Oh, and a good pair of running shoes.
I would switch to a Mossberg 500 12 ga. for home defense, and a G23 for concealed carry, or rather I would keep things exactly as they are.
Stay away from cops, don't speed, accept any tickets or any other rebuff from anyone without question.....and keep my firearms secret until there is no question my life is on the line.
We've had many discussions about non-firearms weapons here in Non-Firearms Weapons for home defense and carry so there's no need to predicate the question of choice with "if they outlawed firearms".
A smart person relies on weapons as the last ditch defense and instead depends upon layers to make their property safer. The outer layer should be some clear barrier that forces an outsider to make a conscious effort to cross onto your property. A simple picket fence just high enough to prevent someone stepping over it will deter many casual opportunists. In countries with more serious crime rates the fences get taller or become walls. The fences become iron with pointy tops or the walls are topped with shards of glass. The area behind the fences are cleared and observable/monitored from the house and the house is set back far enough to take some few seconds or minutes to cross. The yard has a dog or dogs that make noise whenever someone enters the yard, but won't bark until someone starts to cross the fence/wall. No need for attack dogs. The windows on the ground floor are high enough that they can't be reached from the ground or can't be reached without getting entangled in some ornamental barrier (thorn bushes, pointy metal trellises with thorn covered vines) or the windows have attractive bars/grates over them that can't be opened from outside. The windows have effective locks and are resistant to breakage. The doors are fiberglass over steel or steel. There are motion detectors and lights that light the outside whenever someone approaches. The house is alarmed with a panic code that can be triggered from more than one location. There is at least 3 interior rooms with windows that have steel doors that lock automatically when closed and the walls are reinforced on each side of the door so BG's can't just kick through the dry wall to get into the locked room behind the steel door.
All this is ideal regardless of what weapons are allowed in the jurisdiction or not since the objective for the sane person is to keep danger at a distance and buy time to get into a safe position to confront it.
If you're interested in weapons you'd better further define the limits beyond "no firearms". Are electrical defensive weapons permitted? Chemical sprays? Can you carry any non-firearm weapon (excluding the fantasy of walking around with a sword)?
As far as weapons are concerned for home defense, we've had tons of threads on this as well. Various Taser products or chemical sprays are good. If denied those, short thrusting spear or short thrusting swords are great if you're going to train a little with them otherwise stick with baseball bats.
For EDC, the whole forum is full of suggestions. Cane takes top position for easily hidden in plane sight.
If they outlawed guns, I'd still carry. They might be able to outlaw guns via legislation, but according to God, I still have the right to protect myself and I will.
I'd carry a bigger knife than my folder, and have more laying around the house. Some sort of tomahawk and Cold Steel Raja II would also be close at hand.
I like archery, so to take the place of my .30-06 I'd get a nice compound bow or a crossbow. Infact, I'd own many, many bows. I'd probably have a nice, 45 pound compound with no sights, maybe a trigger release to serve the purpose of a "carbine."
For daily carry, I'd try to build some sort of pistol based on the designs of a crossbow and a spear gun, or maybe cut down one of those high velocity single pump pellet rifles. I know it sounds like something from a spy movie (it was kindof inspired by the show "Chuck") but maybe a compressed air repeating dart gun.
First thing I would do is see where something like that goes. Laws are changed all the time for the good and bad. Supreme Court appointees play heavy here!
If we lost that freedom - I guess I would first consider options on where else to live.
Like most everyone else ~ IF I chose to stay behind the iron curtain as a law abiding citizen. No choice but to step back to a more primitive level (pre-gunpowder):
1. Cross bow/compound bow
2. Edged weapons
3. Club
4. The Original Assault Weapon, a BAR: Big Assault Rock
They'd have to find me and take my arsenal/ammo, which would be buried in several place and I'd still keep a shotgun and my AK handy with at least 250 rounds

Total gun dependency is bad for people when they have guns. When they are lost due to theft, politics, or whatever it becomes even more apparent.
There are amazing schools in most cities that teach Fillipino martial arts, from Kali to Escrima. Learn to swing sticks long enough, and you become extremely dangerous with a machete or a tomahawk or a club or a stick, etc. They also get into knives quite a bit, then you learn to fight empty handed. By that time you are so fast from dodging and deflecting sticks that you are good to go no matter how you are caught in an attack, armed or not.
People should train to fight without guns, whether they are legal or not.
