The different models have different grips, so if one doesn't work out for you - don't assume that none of them will. The Glock 19 finger groove spacing fits my hands perfectly - as does the G26 and G30. Those are my prefered models.
The full sized grips, G17/34/22/35 etc, have more space...

Considering your criteria, most of the responses will be either Colt or Dan Wesson. Both are great manufacturers. Do a couple thorough searches on both makes and models. I had the same criteria a few months ago and went with the Dan Wesson commander bobtail.
It would make little sense to me to carry a 1911 in any other way than C&L. The 1911 was made to be carried in this way. Carrying it in any other way than C&L would make as much sense as carrying a striker-fired handgun without a round chambered.
