I have a Dan Wesson RZ-10. I want to convert it to .40 and .357 Sig. From everything I've gathered all I need are .40 magazines, two different recoil springs two different barrels.

My question is what barrels would you purchase for these calibers i.e. Kart, KKM, Jarvis, Bar-Sto, etc.? I don't know much about them and any input would be terrific. Thank you guys.

I've used Bar-sto, KKM and Schuemann AET barrels and all gave fine results when properly fitted. The mantra I heard in the past is that choosing between Bar-Sto and Kart depends on if you're shooting mainly jacketed (Bar-sto) or cast (Kart). IIRC the Schuemann AET is best with jacketed bullets too.

Any of them you listed, if fitted well, should work just fine. One of my 1911s has a Kart and another a Bar-Sto and both shoot very well. I much prefer carbon steel over SS as a general rule and the Kart is carbon while I believe all your other choices are SS. Once you find a good smith to do the fitting I'm sure he will let you know what his top choices are.
