I highly recommend Springfield Armory's Range Officer. It has one of the nicest stock triggers on a 1911. I have a lot of fun with mine but, being full size, I chose something smaller to carry.
 
I can open carry at work so the commander size is not an issue, but I am not ruling out a shorter version either. I have been thinking about one of the springers, but I have never really handled one.
 
look at features , do you want a full size ? do you want a mil-spec, blue or SS. do you want a fully loaded mod?

I went with a S&W 1911 because I wanted an external extractor , high hand beaver-tail grip safty, fireing pin block (ser80) ,novak no-snag sights , triger with over-travel adj. (texas-armament match triger) McCormick hammer, and at $1150.00 thats about half of what it would cost to build one,
 
As far as I am concerned blued is the only way to go. I don't like a SS gun very much.

I have never really looked at 1911's before so I don't really know to much about them as far as all the different mods that can be done, I know I just want a decent gun out of the box without having to spend a ton of money, I think a 100.00 bucks is a pretty reasonable price sealing for this type of gun considering how many makers there are, I just don't know if any one maker has a better gun than the other in my price point.
 
Don't have the cash, but, I'm thinkin' a Regent.

Plain, Jane 1911 with all Colt compatible parts
Feels great in my hand, and shot well too.

if i were buying another 1911 tomorrow in that price range it would be a colt. price not an issue......ted yost custom (someday)
 
I'd probably get an XT22 and a Tactical model of some type from RIA at that budget point. And still have some money left over for magazines, possibly
 
SIGs. All over GunBroker for under $1000 with extra mags, holsters, free shipping, no CC fees, etc.. Great 1911s...
 
bannockburn why are you such a colt fan, what gives them the edge IYOP over the others?

I'm not bannockburn, but JMHO, Colt's been making the 1911 since, well, 1911, and they've pretty much got it down. I have two Colts....a 01911 WWI reproduction and an M1911A1 WWII reproduction, and they're both great pistols. The 01911 is a beautiful work of art and a wonderful shooter. But there's many, many other great brands out there making fine 1911 platform pistols in many styles.
 
Colt Commander, steel frame.

Commanders are the best size for all around carry/range gun. And I love Colts.
 
Sig 1911. Best deal of 1911 for under $1K. They are all the same frame and parts. Just pick your options and finish.

And just before some cry baby whine about Sig's slide profile. Sig 1911 now has "traditional" line too.
 
STI Spartan is nice, I like the RIAs and MetroArms guns as well (and own them) - but your budget gets you up to a slightly more expensive 1911. I'd really look into the SA Range Officer, I think that is one of the best buys in that price range right now.

Also if you prefer blued guns, you won't really like the RIA offerings.

$1200 is a little higher than you specked but its not $3000. Under $1000....Sigs and Rugers are good buys. Colt Commanders are always a temptation as well.
 
I would look at SIGS like the RCS...weight does matter. Or the aluminum frame Kimbers.
