I'm shooting a 250-3000/savage built on a Mauser action (96 I believe) . It currently has about a 1:12 twist barrel. It doesn’t stabilize anything over 100gr very well. I’m planning on rebuilding the rifle for my daughter to hunt with (shorter stock, safety lever conversion, trigger etc) and I’m wondering if anyone has thoughts on possibly putting a 1:8 or so barrel on it. If not it’s likely gonna be a 1:10.
 
Pretty much all the available hunting bullets are designed to be stable from a 1:10 since that has long been the default .257 twist rate but as of late there are some heavy .257 match bullets that specify a 1:8 twist. If your just going to shoot hunting type bullets I think I would just stay with 1:10.
 
I agree that a barrel that can handle 117/120's is a better option, but if the existing barrel can shoot any 100's well you can still have a deer killing machine. A couple of shorter flat base .257 100's you might try are Nosler Partitions and Speer Hot cores.
 
I'd personally go 1-8, just so you'd have the option if heavier/longer bullets should you want it. The faster twist won't cost you anything anyway.

I like it for a starter gun as well. Easily manageable recoil, and the gun is absolutely laser accurate if loaded correctly. I started hunting with it, and now I’ve got it from my dad. I’m gonna build/rebuild it for my daughter. Great deer gun inside 200yds.
 
The new Berger 133gr needs 1:8” or faster. Unless you’re going to shoot a lot of 75gr varmint bullets, I don’t see a lot of downside in going with a faster twist and giving yourself more versatility on the top end.
