.357 Single-Action Recommendations?

I'm a big fan of Ruger Single Action revolvers. I own a Bisley Vaquero but if you are going to need adjustable sights I would suggest a Ruger Flattop Blackhawk. Mine is in .45 Colt but both are just as good in 38/357 and both are well within your stated budget.

Having owned a ton of Ubertis, if you want a shooter and don't want to spend the money on a Colt, I'd have to say that the Ruger BH or V would be the best buys out there.
 
What's a good SA revolver out there, for under $600 (new or used) that I can enjoy shooting for years and years?

For 600 bucks, you might find two good used Blackhawks and if you're lucky, they may even be in stainless. Don't forget to read and use the outstanding Jim March Revolver checkout procedure in the revolver forum stickies every time you buy new or used revolvers. That will save you grief and/or money for sure.
