any problems offhand, that may come up in rebarreling a 7x57 '93 Mauser with a military 1896 Mauser bbl, in 6.5x55?

All 93, 94, 95, & 96 Mauser barrel shanks are the same.

.980" Dia.
.645" shank length.
1.10" x .200" shoulder.
12v TPI thread.

That doesn't mean that one will just screw off and a different one screw on without headspace adjustment, etc.

If you are talking about a take-off barrel, you could run into headspace problems. You could also have feeding problems, but those are usually easy to deal with.

The Small ring Mausers all use pretty much the same barrel shank
I recently took a 8x57mm barrel off a Turkish, Large Ring/Small Ring Shank Mauser, and installed it on an old Spanish 1916 that I didn't like in the .308.
I got tired of it, so I gave it to a friend that is also a member of this forum, " Armoredman "
I told him to keep the loads Light, and he is shooting it with Cast bullet loads.
I did have to take the spacer out of the magazine box but it works great, and I see no reason why you cant use a 6.5 Swede barrel on a ,93 or 95 if headspaced and set up properly.
It is not just a screw off the old barrel, and screw on the new barrel project.

Generally this is true but not always. Sometimes a fully chambered barrel is a perfect match for another receiver/bolt combination. One of my best shooting sporters is a Colombian receiver, a non matching bolt and a Husqvarna Model 640 barrel. Put it all together and it head spaced perfectly and shot great(not common but it does happen)! I presently have 6 or so Mauser 98 sporters in various calibers and with only 1 exception all bolts headspace with every other receiver.

I too have been lucky on numerous Mausers to have been able to do a barrel swap, or used a old Take Off barrel that I purchased cheap, and they both Headspaced within limits, and Clocked up nicely.
But it is best not to provide false hope that that would be the case every time.
I have two Mauser 98 sporters that I used 8mm Husqvarna take off barrels that were like brand new.
A gunsmith had rebarreled the action to a more popular caliber to make the rifles easier to sell, so the 8mm barrels were just going in the scrap heap.
The Small Ring Mausers are not as forgiving, as they have no internal stop collar in the receiver and torque up on the front of the receiver .
Chances are the barrel may headspace within limits, but the Clocking or indexing of the barrel for the sights may be off when properly torqued.

I can swap several of my 98 bolts also and they will headspace just fine.
But if you check the actual Lug Surface contact engagement, you will find you are not bearing fully on the entire surface of the bolt lugs to the receiver.
The rifles will fire safely, but in time , not haveing the proper lug engagement, can cause the bolt to Set Back.
That was the case with the Spanish 1916 Mauser in 308 that I rebarreled to 8mm.
The rifle with the powerful .308 pressures was starting to Set back the bolt in the receiver due to a poor fitted bolt and not full bolt lug contact, thus increasing the headspace to dangerous limits.
So I replaced the bolt, and Lapped the lugs, then installed and headspaced the 8mm barrel.

Indeed. I have tried this with several other receivers and fully chambered barrels without success. My point was that it does happen though not with regularity.
