i want to replace my eotech with one of these, can either one be mounted? Why does it matter for shotgun/rifle? I dont understand.

For one, the shotgun scope has a heavy reticle - no good for long shots because it might cover up what you're trying to hit (or at least enough to be a nuisance). Also, one's variable and one's fixed power.
