Well for a heirloom gun I would want some really nice wood. The best figure and grade I could afford. This is because there is just so much wood and I have several "old beaters" like Iver single shots that actually have beautiful grain(I would almost say figure), but this is becoming more rare as the years go by. But that would be a shame to beat up hunting. So go with the looks or feel you are most comfortable with, then the important thin is to teach the grandson responsibility and love of firearms and anything can be the treasured memory of what "Grandpa and I used"
