I'm very new to this, but I was wondering if there are conversion cylinders for the Pietta 1851 Confederate Navy .44, which is the open, brass frame? If not, I assume its because the brass just isn't as strong as the steel frame? In looking around, I haven't seen anything marketing specifically for this revolver. Any info? Thanks!

Conversion to a brass cartridge? That feature was offered in the Rem. 1858 as a period technological advance. Part of the rationale behind the feature/design is that the 1858 affords a cylinder change w/o tools and carrying a spare cylinder was a common practice. Conversion to a cartridge was the next logical step.

Buffalo Bill Cody carried a Rem. 1858, and it was never converted to cartridge.

A safe load for a 1851 pietta is 20 grains of black behind a round ball lubed up. A 45 colt uses about 35 grains of black powder behind a lead bullet. That 15 grains more of powder can and will put a lot of stress on the frame of the gun.
