Herretts will make grips to fit, you send them an outline of your hand and they will carve grips to suit.

Whatever they would do along the lines of a Jordan Trooper for a single action should do the job, Bill Jordan had BIG hands.
There is also a Pachmayr grip for Rugers that adds a lot of bulk, if you are not shooting CAS which might not allow them.

Any of the Colt clone Model P revolvers should be able to be regripped with the grip frame and trigger guard from the 1860 by the same maker. You will also need a new mainspring. When Colts built the 1860 revolver, they used the same frame as the 1851 but used a larger grip frame and triggerguard. When the Model P was introduced, they went back to the gripframe and guard from the 1851 revolver. That change might be enough for you to find it a better handling revolver.
I believe one of the Italian revolvers come equipt that way from the factory but I can not recall the model.

Have you considered a Bisley frame Ruger?
My hands aren't large, but I've fallen in love with the Bisley framed guns. I have a Bisley Blackhawk in .45 Colt that I'm loading hotter than my .44 magnum loads. The Bisley frame seems to spread the recoil out better than the standard Blackhawk grip-frame or the Super-Blackhawk frame either one.
The grip has more surface area and does a much better job of filling up my hand than the standard Ruger grips.
Best of all, you can convert any Blackhawk to the Bisley frame by ordering the grip-frame, hammer, and trigger from Ruger (about $200.00).

Keep in mind that the classic "plowshare" style grip is often shot with the pinky sitting under the butt so as to make it easier to adjust the gun back to the ready position for the next shot when it slips back and around in your grip.
I take a large Extra Large for gloves for the most part depending on the brand and since I've been holding my SAA clones in this pinky under the butt end manner it's becoming very natural and works well.
Mind you I shoot my SAA clones one handed in Duelist style for my Cowboy Action Shooting. If you're wanting to grip the guns two handed then that would be very different case. Then I'd want a Bisley or some other sort of extended grip as well. But I've got my S&W hand ejector models for holding that way.

If the Peacemaker is too small, then the Walker should be just about right.

The New Vaquero from Ruger is made on the smaller frame but the Vaquero that was made prior to 2005 we larger. I'm thinking you will like the "original" Vaquero. I have an original Bisley Vaquero in .45 Colt I just love to shoot!

In 2008, the "Alchimista" was judged to be the best gun , for the money, by the SASS. The action of the Pietta revolvers are very smooth out of the box and next to my Colt SAA , it is the best of all the relicas that I have.
