How to eat dove breasts
Birds are flying well and we are getting some good rains here in the east valley of the metro Phoenix, AZ area. I'm hoping to get a new 11-87 before opening day but if it doesn't come about, I'll be back out with the ol' 870 16 GA Wingmaster..
Now to the recipe..
Buy some Morton's TenderQuick
Remove breast from bird in the field leaving one wing (or whatever your Fish and Game requires). At home remove each side of the breast by running the thumb from the sternum to the shoulder. Rinse all the breast halves in cool water and pat dry. Weigh all the breast meat together then measure amount of TQ needed (1 TBSP/LB).
Season breasts in a sealable bin like tupperware, apply TQ evenly around all the breast pieces. Let sit in fridge overnight.
At this point the meat will be "cured" allowing for lower temperature cooking.
Smoke the breasts until an internal temp of 145 is reached on the biggest piece.
Remove from smoker/oven/grill and allow to cool. ENJOY!
