The easiest thing to do if you want to avoid any kind of hassle at all is to keep the unloaded gun and ammo in a locked case until you get inside the hotel room, then you can load the gun and keep it ready for use. If you are stopped for a traffic stop, say nothing to the officer about any firearms, unless they ask. There are legal ways to carry the gun loaded in Nevada and Las Vegas without a recognized permit, but unloaded and in a locked case will 99% guarantee you won't be hassled for the firearm, although it is useless for self defense.
Nevada has complete state preemption regarding firearms possessions. That means that city and counties cannot restrict your possession and carrying of a firearm more than is restricted by state law (with the exception of the Clark County registration requirement which will not apply to you as a non-resident). Las Vegas and North Las Vegas have illegal ordinances on the books regarding possession of handguns which are unenforceable due to state law, but they try to intimidate people into compliance anyway.
