I do this with my vehicles on the Oregon coast with the ever present threat of earthquake/tsunami.

Long and short in pistol caliber magnum. Smith m66 and Rossi 92 in .357 and 50-100 rounds in the car. Smith m629 and Rossi 92 in .44 magnum in the truck. Both vehicles have 1 large camp knife (8 inch Bowie or Bolo) and a 4 inch Bravo1. I pack an axe, a one man cross cut saw, and shovel in the back too, plus a week’s worth of food, camp cookware, and water filter/bottles. Sleeping bag, tarp, and cordage.

The big snows we just had knocked out power for a week and closed highways for several days. A good rehearsal for the big one.

One thing I wouldn't count on for a year away from parts sources or "amazon" deliveries, is an air gun. I've had too many of them have seals fail to the point the gun becomes simply a source of extra weight.

Give me a simple and lightweight manually operated rimfire gun instead. Load it up with whatever power level you want to replicate, small bore airgun power or put in "full strength" rimfire ammo as you wish, too.

For a 1 year hike the Appalachian Trail (or any other long distance trail) the only tool I would take is my Leatherman Skeletool CX

The only survival situation I plan for is a Cascadia Earthquake. The plan there is to travel the 22 miles from work to home (including crossing the Williamette River without bridges). I have what I need for that and 3 months of supplies at home.
 
This is different. I would like you to talley all knives, firearms, guns and tools you would take if you were to go on an extended stay away from civilzation. It could be a trek down the Appalacian trail or across the country. We're going to assume a one year duration. You may need to defend yourself against theives and the like.
Your example looks closer to what I would pick for a stay in a wilderness cabin or other fixed point (or at least a vehicle supported trip), that to a foot traveling situation.

If I was traveling on foot, and needed to address both being a hunter/gatherer and self defense, I might start with something like this:
  • Ruger 10/22 Take Down plus extra mags
  • Glock 19 plus extra mags
  • Mora Companion or similar knife around 4 inches.
  • Victorinox Trekker or similar medium size, multi blade folder
  • Sven folding bow saw.
  • As much ammo as I could comfortably carry
The two guns are in excess of what I actually carry for back country hikes so would slow me up a little, but would add the foraging and self defense capabilities the OP asked for.

If I was in a fixed location, or had a vehicle for support, I'd add
  • S&W M&P 15 Sport (or similar AR style 5.56mm carbine) with extra mags
  • Savage 110 Hunter in .30-06
  • Mossberg 500 shotgun or similar slide action 12 guage
  • Gränsfors American Felling Axe
  • Bahco 36 inch bow saw
  • ESEE Junglas or similar 8-10 inch camp knife
  • Leatherman Crunch or similar large multi-tool
  • As much ammo as I could afford
Obviously, that ignores food, clothing, shelter, etc. but I think it covers guns and knives pretty well.
