Slightly off topic, but was that a Schoefield his guy shot the Sheriff with. The ribbed barrel looked like it, but it seemed a little thin in the crane area.
If you've ever seen Bob Munden on the American Shooter you'd see how fast an expert can be with a SA 1860 Colt.
I saw Bob's shooting demonstration when I was in High School and he was touring schools (see his Biography). It made a lasting impression on me. Using an automatic timer, he drew and shot 2 rounds at balloons set 15 ft apart, he was 12' from each (if I remember correctly) using blanks. The wadding and powder would burst the balloons and they where too far apart for one shot to break them both. I swear I only heard one shot yet both balloons broke and he showed 2 expended cartridges. Time was less than 1/4 of a second!!
That's a video of Badlands Bud showing how it should be done. For a similar ten round dump, I can run it in about 6 seconds, and I'm no great shakes as a duelist shooter.
Since in the movies they don't actually have to HIT anything (blanks) or deal with full recoil, and the guns could be slicked up quite a bit by a good armorer, don't see any reason why with practice they couldn't fire that fast.
