In keeping within your criteria - Dan Wesson. They're well made, use top-shelf small parts, and are an excellent value 1911. I like the fact that they were (and remain) committed to the 10mm cartridge.

My stock, standard Kimber Custom II with the rubber grips has been everything I expected when I bought it. No worries, mate.
 
I've fallen in love with the Rock Island Armory 1911's. They work good right out of the box, at least my two have. I would like to have a NightHawk1911 of somekind before long, though.:)
 
The Union Switch and Signal I just hocked my Discover card for.

First pistol I ever made that single large hole in the target with. Laser beam. :)
 
I'll put in another vote for the Taurus PT1911. It has been perfect right out of the box. I'm sure the custom pistols are nice, but hey, I'm a working man.
 
I must be the only one that likes Springers. I have two and a half (One is a Springfield forged frame with a Colt slide, that was reworked and hard chromed by D. Williams in the Springfield custom shop.)

In my dreams, I'd get a Jardine-smithed Valtro or a WWII Remington-Rand.
 
For the money Les Baer makes the best 1911 there is. The PII is running right around $1400 and you would be hard pressed to find a 1911 at this price that will have the same quality.
