Fitting stock for iron sights

I'm restocking a sporterized 98K Mauser with peep sight. I've ordered a Prairie Hunter stock from Boyds. Even though it says designed for both open sights and scopes, I'm anticipating having to lower the cheek based on the previous stock fit. Can anyone point me to a resource for how to best to accomplish this without it looking like a just took a sander to it?

I did a search and didn't see anything. Appreciate any help.
 
It's Basic Woodworking 101.

Start out with a course wood rasp, or belt sander & course grit belt for fast wood removal and rough shaping.

Keep "try fitting" the stock until you are almost satisfied with the fit and sight alignment when you pull it to the shoulder and look at the sights..

Then progress to finer & finer finish sanding grits on a less aggressive sander for final shaping, and finally block sanding by hand for final finish surface prep.
