Would a ghost ring type sight be a good choice for deer? Will a ghost ring type sight be of better, the same, or less utility than the standard rifle type sights that come with the barrel?

I have no experience with ghost ring type sights. What is the best brand for the money quality wise and what features are important?

I will be using a 20" rifled slug barrel on an 870 Express. The ghost ring sight will mount on the receiver - correct?

A ghost ring will be faster on target, but probably not as accurate as the standard rifle sights if you have time to line them up properly.

On the otherhand, a receiver peep sight, with a smaller aperature then a ghost ring, is more accurate then open rifle sights, but you give up a little in low-light conditions.

To work properly, the ghost ring, or peep sight must be mounted fairly close to your eye on the receiver.

So, the Ghost Ring is mounted as far to the rear on the flat surface of the receiver as it can be mounted?

I have an Ultra Red Dot that I played around with on my Mini14 and it has an adjustable dot size - I believe from 4-11 MOA - however at the larger sizes the dot would elongate unevenly and become more of an oval on a slant if that makes sense. Can the pips or whatever they are called in the Ghost Ring be adjusted for size?

I don't think we are talking about the same thing.
It sounds like you are asking about some sort of electronic Red-Dot or Holo-Sight.

A ghost-ring sight is an iron sight with a very large hole in it for a peep.

A receiver peep sight has an aperture disk with a smaller hole in it.
They can be changed to a larger aperture size, or removed completely, at which time the threaded part becomes a ghost ring.

O.K>, now we are getting somewhere!

Are you getting a smooth-bore slug barrel, or a rifled barrel for sabot slugs?

If the latter, I would suggest a cantilever mount barrel and a low power scope. A 2x or so fixed power, or a low power variable like a 1.5-4.5x.
The cantilever mount will allow you to change barrels without losing your scope zero every time.

For a smooth-bore & rifled slugs you will probably be just fine with the Remington sights you get on the barrel.

20" rifled slug barrel. You recommend a low power scope over a Bushnell or some brand of holosight? I don't expect to take shots longer than 100 yards or so and that is why I wasn't really thinking about a scope. The iron sights that you originally posted also look interesting.

I would consider a low power scope simply for the increased visibility in dawn / dusk deer woods.

At low power it will be as fast as a dot-sight, and will make seeing a deer clearly & threading a slug through the brush much easier in low light.

Makes sense. Thanks. All I have ever used or shot was a smooth barrel with a bead sight. I am going to have time for hunting finally and I am ready to get started.
