I just cleaned up after processing a couple of deer and am about to break out the WEPS to put an edge back on the blades i used. I remember seeing these sometime and thinking they were a gimmick, but I am very interested in hearing your opinions. I don't process beef or pork anymore, just a few deer and have given away my commercial butcher knifes i had in college for meat processing classes.
I really hate using my field,knives for skinning and boning, though. Please share your thoughts on the replaceable blade system.
