I get the sense that this is a Glock town. I've found that the 1911 selection in town is a bit light, and most are the bells-and-whistles 1911s. GI-type 1911s are pretty hard to find and they go fast, except for that one at Cabelas, apparently.
Scottsdale Gun Club gets SA 1911s in pretty regularly, but they go right back out the door. They have a stainless GI right now for $550, and nothing else without a beavertail. I'm surprised that such a posh place has such good prices, but they seem to sell huge volumes.
Cabelas has had that HS 1911 for about 2 months, and they say they get SA shipments unpredictably.
Sportsmans selection, both here and back in Denver was pretty light on 1911s. Too bad since they have great prices on everything else under the sun.
I haven't found any RIAs for sale around here yet, but I'm keeping my eyes peeled.
Back in Denver (I just moved) the gun show had High Standards and RIAs, and the only place I found RIAs other than that was at a Tractor Supply type place in the sporting goods section.
