I put a question mark because I am the noobiest of noobs, no hunting experience at all but a friend of mine knows someone in central fl with some land and hogs. As I understand there are no regulations or restrictions when hunting hog on private property. We are going to try and find someone with experience to tag along but i m still confused with what to do after we take one? I figure the last thing you want to do is leave the carcas, so is this like a take to a butcher kind of deal or can I easily learn to skin it myself? Links to guides or books would also be appreciated.

Make sure you "Always" check your local hunting laws every state has a site to look at, so no reason not to look.
Remember to have good knives and an Ice Chest to store the meat if staying over night, etc...

Depends on where you consider "central" Florida to be - for some it is down near Lake Okeechobee, for others it is north of Gainesville.
Somewhere in between are many folks who will butcher and process your hog however you want. There are also a lot of folks that you can pay to guide you if needed

The above is correct but brucellosis is the real worry. Trichinosis is a worry only for eating undercooked pork. Brucellosis can be transmitted to humans and dogs and can be fatal. Pseudo-rabies is quickly fatal to dogs but not humans. Always wear latex gloves and don't dress/butcher the hog if you have open cuts because latex tears easily.
