I've been asked this a few times now, so...

It took me awhile, but I found out exactly what it was that I used for the stock mounting hardware/cross pieces. They're called Screw Posts, used in book binding, especially scrapbooking. Do a google search for 'scrapbooking screw posts'.

Find one that is about the length you need, and then fine tune it with the screw post extensions.

There are lots of places to get these, I just happened to find mine at a local hardware store.

If you are doing it for yourself, and can figure out the right location, there's really no need for it to be adjustable. However, if you want that feature, I found thumb wheels at my local Ace Hardware that should work fine. I bought my cheek piece from Karsten, and it's a $60 item. I'm sure you can make one for much less.
