Guess we must have some exceptionally large deer.....boned out adult doe's will produce about 90lbs, have had a couple bucks produce as much as 125lbs+ of meat. Got some Antelope that usually run about 40lbs meat, they're mostly all hair and legs.
I usually wind up with about 40-45lbs of meat from a processed deer .i get it all made into cube steaks and butterfly the tenderloins .when i am ready to eat it i soak the meat in a little kosher salt water and rinse to get all the blood out then dip in egg and coat with italian flavored bread crumbs and fry the steaks.can't tell the difference from veal cutlets.I had people tell me that it wasn't deer meat they were eating.
