how quiet can i expect?

Your Gemtech should be at least as good as the ASE Utra rimfire suppressor I have on my R55 Benchmark (.22LR).
It is very quiet! You will be able to shoot without ear muffs if you use ammunition that is subsonic. On my rifle, all you can hear is the action. People who observe me shooting at the range often wonder what kind of "air rifle" I am using!
On a bolt gun it will be even better.

It depends a lot on what kind of firearm and ammunition you are using. I have a silencerco sparrow, which is noted to be better on rifles than pistols. With regular bulk pack ammo, my sparrow is quiet enough on a pistol that it doesn't cause me any discomfort, and I have very sensitive ears.
On my 10/22, the sparrow is much quieter, and most of the noise I hear when firing is action noise. Even the action noise is subdued by a polymer bolt buffer. The sparrow on my bolt gun with regular subs is stupid quiet, probably about the same as my relatively quiet 22 cal air rifle.
When using cci quiet ammo, my pistols sound like my rifles with regular subs, and the rifles are a good bit quieter than my air rifle.
I think you'll be very pleased with your can after your wait is up.... If you're like me, you might start plotting your second form 4 right away.

CCI standard velocity is what we always shoot through our cans. When measuring dB with our Essence the action racking by itself measures louder than measuring a shot through the Essence. With subsonic ammo the majority of all 22 suppressors sound really good.

I have a SilencerCo SS Sparrow. When shooting CCI Standard Velocity thru a pistol length barrel, 2-3", it sounds about as loud as a staple gun. I was shooting the other day, and my wife, sitting about 20 feet away said it sounded like someone stepping on small twigs. One thing not many people mention about shooting suppressed, is that a suppressor changes the TONE of the shot. So, it doesnt just sound like a really quiet gunshot, it doesnt even sound like a gunshot at all, kind of like a snap.

My Guardian 22 on a Ruger Mk III Lite is very quiet with standard velocity CCI, like "ptht", if you can imagine that sound 
I do notice though that the handgun seems to dirty up the can much faster than my rifles, not sure why.

Depends on a lot of things, ammo and barrel length being the largest factors, in that order.
A bolt gun running CB ammo, for example, the firing pin striking the case is the most noise you will hear, unless the bullet impacts something that makes more noise.

This is the video that convinced me to get an element2 this year. Basically the SWR Spectre and especially the AAC Element are (at their worst, counting FRP) better (max of 118 db on the element) than the Outback at its best (as low as 121 db, as high as nearly 130). And this video is with the latest model of Outback vs the previous generation of element. I'm of the opinion that Gemtech cans are below average performers; there is simply no excuse for a 22 can that meters at nearly 130 decibels.
Mounted on a Ruger MK 5.5", it is scary quiet. I need to chrony some rounds, but so far everything rated 1200 fps and slower (from a rifle) has been fine.
