How to make your Deer season last all year long....

I've mentioned in previous posts my priority and passion is for trophy deer. As anyone who hunts will attest to, Mr BIG doesn't always show himself. Doesn't mean the season wasn't a success... shift to the secondary goal of filling tags. That goal was met by putting six (bald headed deer) in the freezer.

Sometimes forget how much is involved after pulling the trigger, I'm finally at that point where the work is now completed and can relax a bit. After this weekend will have the last of the sausage logs smoked and put away.

Started off grinding deer meat, pork shoulder, pork fat, and beef fat. About half the deer will go into burgers, cheddar jalapeno burgers, and bulk packaged burger. Remainder of deer was made into smoked summer sausage.

Got the family involved, grand children and son were a great help. Those that help can enjoy the rewards :)

Nice looking process line and finished result!

Sad to say I have two weeks of Elk meat left from a September kill. But Elk is all I eat on weekdays and the 6 months has been great. On to beef in April :)
 
My passion is more along the lines of doing exactly what you are doing in those pictures.

I like harvesting deer and turning them into tasty food.
 
If able to do it over time I like processing. Sadly, I usually have to block off one day and cram it all into that time frame. Makes for cold hands, a sore back, and a lot of cuss words. If I had your kind of help, it might be a little better.
 
Wow.....did I misinterpret the post title! My first thought was..... become a poacher! :rofl:

However, good post.....makes me look forward to hunting season! Looks like you’d have to beat people away from your door! memtb

I think we under estimate the time meat processors and lockers put into their products. Probably spent at least three days working on this years batch, and that was with family members pitching in. My son made the comment: "maybe you shouldn't shoot so many deer next year." Think he might have a point there.
 
Did that for years and it takes lots of time. Now that I'm older I just let my local meat market take care of it. They treat me well and the price is right. I now spend my time doing something else...

Am blessed to have the access to game and ability to fill a freezer. Already have family asking if I have more deer sausage. :)
