How well does WHITE OUT work for sights?

If that's all you have to be concerned with - text color - I'd say you're pretty blessed.

And if you look around here a while, you won't see anyone else using blue, red, green, purple, chartreuse, Fuchsia, or any other color text but black.

I tried the whiteout on both my front and rear sights, but I could still see them. It doesn't make them disappear.

Read the small print. "This product is most effective when used in snowstorms/whiteout conditions."

Nail polish in neon colors as a base. After it dries, dab a little Ultra Glow v10 paint over it. I can attest that this is an inexpensive way to make poor-man's hi-viz sights that also glow for a long time when exposed to UV light.
