I have a Remington 870 that I would like to shorten the LOP a little on. It has the factory rubber recoil pad and synthetic black stock. Is there a thinner recoil pad that I can use instead of the standard pad?

I was thinking about adding a 3 or 4 position collapsible pistol grip stock, such as is on the M4, but that is kind of an expensive way to solve about 1/2" too much LOP.

I don't know of any extra-thin recoil pads. The "proper" way to shorten LOP is to cut the stock down then grind the recoil pad to fit. Not hard, but you need a belt sander.

+1 on the youth stock. Remington has a kit for it where you can add or remove spacers to adjust the LOP from 13" to 14" LOP.

Go to there websight too check it out.
