What do you like and why?

It seems that I have more full flat grind knives than any other. I didn't necessarily choose them because of the blade grind. It's just that I liked those knives and they came with that style blade.

But at the same time I have several hollow grind knives as well as my Mora's with scandi grind.

Of those I can't tell a huge amount of difference between full flat and hollow. I can't seem to get the scandi knives quite as sharp, but that may just me my sharpening skill. The scandi knives at least "appear" to be something better suited for heavy use. The others better for fine cutting.

I have one Bark River with a convex grind. I'm still undecided as to whether or not I like it.
 
I prefer the flat grind, but like you go with whatever the maker specified. Different blade shapes lend themselves to differing grind profiles. My only frustration has been with bayonets and sharpened crowbar type "survival knives".
 
I think it depends on the steel and the intended use. Some hardened tool steel will support a hollow grind where a softer or more brittle steel would not. Scandi is meant for all around utility which is easy to restore. Flat grind is great for all around use. Convex or “appleseed”? I never really saw any advantage myself. The properties of the steel, the profile or grind, and the intended use should all be considered and work together.
 
Flat grind. Like some saber grind knives as well. Appreciate the scandi grind (got to, being of Finnish heritage) for some utility knives (first knife as a boy was a puukko). Went through a period in the '80s, stationed in SoCal, when Emerson became the status blade, but after a while, took a dislike to the chisel grind, and haven't been back since.

Full flat or saber flat grind. Convex is too complicated for me. Hollow grind is fine too, though a shallow one is preferred. Strength of the grind is mostly dependent on the thickness of the edge left after grinding. I reground an old Spyderco recently and kept the thickness at the top of the sharpened bevel below 0.02 inches with a 12 degree edge. When i sharpen it enough to get above that, I'll regrind it again.
 
No preference so long as the geometry works for the intended purpose. For my own I've done hollow grinds.
