Well, if you want to look at captured weapons being used by the opposing side, the weapon most highly thought of by the enemy was probably the SVT-40. Most accounts that I've read say that the SVT-40 was actually more popular with the Germans than with the Soviets. German troops were better at taking care of the rifles, so they worked better for them than they did for the Red Army.
Of course, I'm sure the Wehrmacht captured many, many more SVTs and 7.62x54R ammunition than they did M1s and .30-06.
