I am looking at either the Knight Revolution II, or the Omega X7 as a muzzle loader choice. I want to make sure I have a quality accurate rifle to deer hunt with in Utah next season. Cabelas is having a smokin sale on each right now. Any advice?

Either will get the job done, I'm kinda partial to Knights, but that is just me.

One thing I will say is stay away from .45cal or other oddball sizes you might come across in an In-line .................. .50cal is the way to go.

synthetic or woodgrain stock? What about safety, can I load and primer either of thses and carry, ready to take a shot right away?

+1 Encore

I use the Encore .50 cal. so does my son. These guns are hole raggers. when loaded right.
The Encore may cost you more but, You can later add different barrels and use them for other types of hunting or shooting.
Very well built guns, and very safe. Break open design that seals the primer from the weather. And can be removed in seconds. Many different stocks to choose from. Mine is a plain Blued Encore that I added a pro hunter stock to.
This really reduced the recoil.
My sons is wood Lam. Maybe slightly heavier, but with the thumbhole stock is easy to shoot and looks good too.
The composite stocks (other than the pro hunter stock) have more felt recoil and are sometimes noisy in the woods. The Pro hunter stock is not.
You can even change to a hand gun barrel and stock. This gun is very hard to beat. Even if they cost more. You get what you pay for.
The Knights are well built guns when you get into their pricier ones and they do shoot well. I personally don't care for their design, but that is just my oppinion. But they are good hunting guns.:)
