My way to keep humidity down in my garage kept safe.

I just got a new super large safe and I have it in my garage that is not temperature controlled. I have two golden rods installed in the bottom back wall and I put two Eva-Dry E-500 Dehumidifer on the top shelve. Do you think this is enough I live in central Texas and we have humid days. What should I do in the winter do you think I should do something to keep the temperature up inside the safe? and what would I use?
 
I would think you would be fine.
Museum ideal is 50% humidity at 70 degrees.

But without putting a calibrated Hygrometer in the safe there is no sure way to know.

I would not worry about winter in Texas, as cold air cannot hold as much humidity as hot air.
I think two Goldenrods would keep it from fluctuating up & down as much.

As for preventing rust altogether?
Hard to go wrong with a wipe down with a Rig-Rag every time you handle a gun.

Humidity is less important than condensation. The goldenrods will take care of that.

Nope. Humidity is in the air, condensation is on the guns. So long as you can keep it in the air, you greatly reduce the issues.

You should get a hygrometer for inside the safe. It's hard to say what you should do until you know the specific conditions you are dealing with. If you take too much moisture out of the safe, you may end up doing more harm than good.
