While there are significant differences in the trigger function of the DAK and LEM their basic purpose is the same. They are DA pistols that do not have decockers, but still have triggers lighter than the old DAOs. The purpose was to reduce the potential for unintentional discharges from the short SA pull or from a user forgetting to decock a DA/SA.

I've read lots of threads discussing things like the trigger weight and speed of follow-up shots, but none discussing why these models were created. Has anyone heard whether these designs have actually reduced NDs compared to designs like DA/SA or pre-cocked strikers like the Glock?

The designs were created for police departments that require the guns to function dao with a certain trigger weight- namely, the NYPD.

The Sig DAK has one consistent weight. HK has a coupe different weights on their LEM triggers and some have a shorter reset, if I remember correctly. You don't have to let it go back the full way, but it offers restrike if necessary.

From HK Literature:

Law Enforcement Modification (LEM) Trigger System
Developed especially for a U.S. government agency, the Law Enforcement Modification (or LEM for short), is a unique trigger mechanism created specifically to improve the trigger performance and reduce the weight of the Double-Action Only (DAO) trigger pull in the P2000 SK, P2000, USP, USP Compact , and K45/HK45 Compact pistols. With this mechanism, HK pistols can be fired like a standard DAO semi-automatic pistol where every round is fired by simply pulling the trigger fully rearward with the hammer starting at the forward rest position. The design of the proprietary HK LEM system allows the weight of the DAO trigger pull to be reduced to a smooth and constant 7.5-8.5 pounds because the two-part hammer is precocked every time the slide moves rearward.

I really like this trigger for a defensive pistol. As Prince Yamato stated, you can easily mix and match springs to modify your trigger pull weight.

One of the best reviews I've read on the LEM and benefits is here:

BTW, you can have an HK LEM with a de-cock function, or at least you can put one together here. In Europe it's the V0; LEM with spurred hammer and decock function. I modified my P30L from a V3 to V0, just by buying a few parts from HK CS. It alows my to de-cock without dry-firing to release the MS and also makes it easier for dryfiring without having to rack the slide to cock the LEM.

Perhaps a simpler question would be, has anyone heard of a ND with a SIG DAK or H&K LEM?

I have heard of ND with both DA/SA (usually while in SA) and striker fired pistols.

On our department the SIG DAK was very popular with officers switching over from revolvers, because it felt much like a very smooth S&W K-frame

I know a lot of people like them but I much prefer DA/SA over a DAO trigger. Train enough with either and the chances of an unintentional discharge gets much smaller.
