I have a new Remington 1911 R1, and would like to find some "custom" grips for it to enhance the gun. What size grips do I need to focus on?
 
You are looking for Government/Commander or Full Size grips.

Officer/Compact is the other size. They will be too short for your pistol.
 
There are two main sizes, Government/Commander and Officer. Variations include Roundbutt, Bobtail, Square Bottom/Magwell Cut and Beveled (standard, what you currently have).

Both beveled or magwell will fit your Remington and generally the latter will cover the MSH takedown pin and will be flush-cut (flat bottom). Some prefer the look, some do not.

Did you mean enhance the looks or the shooting?
Either way, grips are like gloves or dress shoes. Better handle them before you pay. Also, adding exotic wood or bone to a combat firearm could make it look garish and the owner vain.
For shooting, if your paws are at least midsize, one thing to consider is a wraparound weighted 1911 Pachmyer grip. You may find the balance shift helpful to your practical accuracy.
