I had my first day at the range with my new Double Defense, I ran about 60 rounds of 2 3/4inch target loads through it without a hiccup. I then tried 4 2 2/3 in slugs again with no problem at all.

I then thew in some 3inch Federal 00 buck and both barrels fired at the same time, when I opened the action the shells were jammed in and the extractor wasn't strong enough to get them out. I had to put a piece of dowel down the barrel to push them out.

I tried the same shells again and it fired one at a time like it should, but the extractor problem stayed. Then a few more times, sometimes both barrels would shoot off at the same time and sometimes it would work properly but always had the extractor problem, all with the 3inch Federal 00 Bucks loads.

I ran a few more target shells and they all fired and extracted perfectly. Is there something wrong with my stoeger?

I would definitely say there is something wrong. Whether it is a design defect (i.e. a problem all of them have) or a manufacturing defect (something unique to the way your gun was made) or something has become damaged or broken I don't know. There is no question that something is wrong if it is in fact firing the second barrel without a second pull of the trigger.

Perhaps you should contact the manufacturer.

And figure it out quick. That's a firearm firing more than one shot per trigger pull, thus, a machine gun according to the BATFE.

It is a single trigger, double-barrel shotgun. First - lose the 3"" 00....OUCH! - but it should NOT be doubling - contact Stoeger

try holding it tighter against your shoulder and jerk the triugger back hard next time.

I think maybe when you fire a hot load the gun moves rearward enough that your finger releases the trigger and then when the guns moves back forward, because you muscles react, you pull the trigger again.

kinda of a bump fire but not intensionally.

I bought a DD when they first came out and mine has occasionally fired both barrels with one pull as well, and I've only shot light "bird" loads through it.
