Summer sausage !

    Just thru together a batch of deer summer sausage, will let you all know tomorrow how it turned out...........

    Good for you...doing it yourself. I just paid $12 for 5lbs of the stuff when I had my doe processed the other day. That was on top of the flat rate of $60 that I paid.

    I too am a summer sausage lover. There is an interesting character in my recurve shooting group that 'ferments' his venison in the process of making summer sausage.......Man, i'm telling you, it is THE BEST.
    I don't know how he does it.....just glad he does it!

    go here. they make the best summer sausage mix ive ever tried. Everyone that has tried what i make says the same. I make at least a 100lbs a year mostly because i have so many friends when the smokers going. they make a hell of a good snack stick mix too.

    I have tried mixes before & no one liked it, they say my mix is better, they just came out of the oven, I will let you know in a little while how this new recipe turned out.

    Tom Tom Tom. Real summer sausage comes out of a smoker not an oven ;)

    the machine. It holds 24 sticks of summer sausage at a time.

    You call this a oven, I take it you have used a Holland Grill. Came out pretty good I guess, everybody been eating the hell out of it, I myself think it is a little salty.

    tom next time you do it add about 3/4 cup of brown sugar for ever 12lbs of meat when you mix in the pork. It gives it just i hint of sweat taste.

    I have a recipe that call`s for some browned sugar, think I will try it out next. I usually turn out some where between 10 & 20 10lbs. batches a season & likely every batch different. Thanks for the heads up, but I don`t ever put any other meat in my venison summer sausage, that`s the whole idea behind (Deer Summer Sausage).........

    another good addtion to try is high temp cheese. It comes in cheddar and pepper jack. The pepper jack works real well with summer sausage.

    I just got finished making up a 25 lb batch. Ill fire the smoker up tomarow morning. I needed this batch for Christmas presents. Its what everyone i know asks for a gift. People have no clue how much work is involved. I bought a verticle stuffer and a meat mixer and that helps but its still work and you have about 10 hours of babysitting the smoker which makes it much more work if you can only do 4-6 sticks at a time. Id hate to go back to my old small smoker and stuffing with the grinder and mixing by hand. THATS WORK! My dad hit me up to do 50 lbs for him and i told him to bring it to the butcher shop. By the time i buy everything and figure my time involved its proabably just as cheap there. Isnt as good though!
