Uberti 45-70 Sharps Rifle

So I work at a gun shop & we have an Uberti 45-70 Sharps Rifle (Standard)... I've got a hard on for this rifle for the simple fact that I loved the "Quigly Down Under" Movie. This year marks my first year taking a white tail deer. I have 3 white tail deer tags for my state and all I have that qualifies (in my state) for a deer rifle is my M4 (with 5 rnd mags). I have contemplated trading my custom build M4 for this rifle, but have decided against it due to the fact that I built it myself and it is my baby. So... I have decided to just buy the Sharps "out-right". My question is...

Which gun should I use to take white tailed doe? The 45-70 is a slow moving but HARD HITTING round = knock down. Or... the 5.56 "62 grn" man killer w/ an ACOG scope? My practise with the M4 w/ ACOG is very high as I am a US Navy Vet, but I would think since I am a novice deer hunter I should go w/ max knockdown via the 45-70. Will the Sharps shred the deer? I am buying the Sharps tomorrow reguardless by the way. What do the seasoned deer hunters think?

P.S. I know I should just go with a bolt action rifle... but I dont want to do it that way. Its either M4 "Man Killer" or 45-70 Old School "man killer"

semper fi I used a 45-70 sharps Pedersoli Long range express last year shot a 10 pointer at 110 yd,vernier sights 405gr lead bullet. when in one side and right out the other went through both lungs and heart, buck only went 10yds. if you do your part the 45-70 will do the rest.
 
While I love old school, I sure hope you like lugging that heavy beast around. The 45-70 will do anything that needs doing as long as you can do your part.
 
I can handle carrying the beast. I used to be a wrestler, then cage fighter, then joined the Navy & went through Basic Underwater Demolition/SEAL training... I know how to shoot, and I can pack the beast for quite a while. So... Will it be too much for a deer? Or will it do the job and leave me meat to harvest?
