Venison in the freezer

11-24-13 - 5 PM Central - South central Nebraska - Remington 700 .30-06 - Remington 165 gr. Core-Lokt . Shot from my home made ground blind at 45 yards. At the shot she wheeled at ran about 50 yards before piling up. Field dressed about 130 lbs. The fresh deer liver for supper the next night was an annual treat. Unfortunately I shot a bit low clipping the heart so no pressure cooked pickled heart from her.

I had passed on a small bodied fork opening afternoon the 16th and took this gal in the last 30 minutes of light on the last evening of regular firearm season. I'll go again for antlerless season starting in late December God and weather willing.

Yeah, she was a nice sized doe but I have taken a few heavier than that. Field dressed weight should have read 130 lbs. It yielded just a tad over 60 lbs. of boned meat.

As far as her being tender we have never had one ( knock on wood ) that wasn't in 33 head taken and it seems even the big bucks (my largest to date was one that weighed about 185 lbs. field dressed ) have loin and back strap steaks as tender as the smaller deer. Them being grain fed attributes to that I believe.

I need to start hunting with you. By the time you got done messing around eating hearts and livers I'd be halfway done with the tenderloin! :D

Great looking deer. Glad to hear you've got some meat in the freezer...it sure takes the pressure off the rest of the season.
 
flipajig...THATS WHAT IM TALKING ABOUT!!!

I make a lot of sausage with venison...can't get enough of it. Nothing beats the sausage you can make at home.

That mirrors my experience in South Dakota as well....I've taken mature bucks that people told me "would only be fit for the dogs" and not been able to tell the difference between that meat and that of a young doe's
 
Great shot placement. well done . Nailed througgh the pocket. sometimes a 50 yard run... but thats ok. she will have been fully bled out when you Gralloched. 30-06 with a decent soft point bullet together with that shot placement a recipe for success

Interlock, I have to disagree with you a bit that my shot placement was great. Had it truly been great my projectile would have hit her a couple inches higher as I always strive to and usually do and my wife would have been pressure cooking and picking that heart !

We like them that well.

Over the years she has really perfected that delicacy. Served cold, sliced to about 1/4 inch thickness with a sprinkle of salt it goes great with a mug of suds or a mixed drink.
