Confusing question. Are you wondering what ammo, or what gun to shoot SKEET with?

The standard load for target games is #7 1/2 shot, because it'll do whatever you need, and won't carry out of the range's danger zone. I was almost blinded once by a jackass using #2 duck loads on a skeet field, and his shots were carrying over onto a sporting clays course I was shooting.
It’s been many years since I shot skeet. Kinda gave up because the birds, regardless of how you cooked them were terrible.
The gun. An O/U needs to have different chokes in each barrel. Modified in one and OC in the other. That is what worked for me. Also, depending on the station you are shooting from, first fire barrel selection needs to be easy.
Ammo:
I reloaded my own, but I used STS hulls, 18grs of Universal clays, can’t remember the wad, and 1 1/6oz of #7 1/2 shot. Shot lighter than this will often just alter the flight path of the bird without breaking it, and anything heavier, there may not be enough shot in the air for a hit. My load was given to me by a world champion Cliff Davidson who passed a number of years ago. I found his recipe worked.

I don't compete or anything, but I don't like to spend a lot of money on this kind of stuff, so I just go down to the nearest Wal-Fart and get the cheapest 7 1/2 or 8 shot that they have. Federal was my last pack, but before that it was Winchester, and I don't remember what it was before that.

No 9 is most common in true Skeet loads.
Trap also has a maximum of 3 D.E. powder along with the 1 1/8 oz no 7 1/2 but I don't know if that applies to Skeet.
You don't really need the full 1 1/8 oz, an ounce will break targets just fine.
Actually 20 ga with 7/8 oz of shot is all you really need for Skeet but the Cheapmart promotional 12 ga shells with that light a shot charge can be a little spotty in the pattern. Probably adequate to get started with, though.

For casual targets I make a standard load of 7/8 oz of 8.5's at roughly 1225 fps. I shoot this same load for skeet, trap, and sporting. I thought about dropping to 3/4 oz skeet, but didn't feel like re-adjusting my press each time I loaded for a different game.
If they are registered targets, I normally shoot 1oz of 8s Federal Gold Medal Target shells.

I haven't shot Skeet for a number of years, but I use no 7.5 or no 8 for Sporting Clays and pasture trap. In my 28 ga, I use 8.5s.
Our club doesn't allow anything larger than 6 shot for safety reasons, but they don't offer Skeet either. It's a dedicated SC club, with occasional Wobble Trap or Five Stand for fun.

If you are shooting on an actual SKEET field, then you use #9, as no target is further than 21 yards and that puts the most pellets in the air ......
Lots of folks prefer #8 for trap. skeet and sporting clays while some might switch to 7.5 for 27 yard trap, or 40 yard sporting targets

I normally shoot Winchester AA loads. Years back I bought 7 cases of the Estate loads at Cabela's. I think they were $35.00/case. At todays prices, that was some time ago.
I also bought a set of short Briley tubes for my 12 ga. Now I can shoot 20 ga. in the same gun.
