What happens if you fire a M91/30 with the barrel INSIDE a block of ballistic gelatin

If you stab the barrel into the gelatin you create an obstruction. Likely blow the muzzle off.

I taped over the muzzle.

The bayonet greatly altered your gas performance by creating a conduit. It would be nice to see the result with no bayonet; whether the muzzle flash follows the bullet, shoots out in front changing its course, or bounces back and sprays the shooter.

Inconclusive by being silly with the bayonet, should've been left out of the equation altogether.

The whole thing is mostly silly and the gelatin could only give us a very rough approximation of the damage that muzzle gases can do.
