Not the ultimate 1911, but I'd like one because there isn't one out there--a polymer framed 1911 *SINGLESTACK!!!!!!!!!*
There's enough selection, parts etc to make anything I want given enough time and money, but no poly framed singlestacks. All the plastic frames are doublestack

Current, off-the-rack 1911?
Springfield Pro. This gun completely recalibrated my 1911 tastes and expectations. Not a real pretty gun (plain checkered cocobolo grips, 20-lpi checkering and Black-T finish don't make for much of a prom queen) but it's stone reliable, dead accurate, and the most well-fitted off-the-shelf gun I've ever seen.

The one my Dad carried when He went on Mail runs as the Coxswain of the boat. One of the few stories he told me about his time in WWII was they would only give out ammo to the guards and boat pilot for the Mail run. When they came back out to the ship (USS Cowenesque a fleet oiler) they would shoot at the Flotsam and Jetsam in the water.
barring that one I would like a US GI with all of the parts original in good conditions ie no scratches ok finish.

Because there are endless variations on the 1911, both from the factories and from custom pistolsmiths, there really isn't one answer. It is different for every individual.
For instance, I objectively know that a SA Professional is a really cool gun. But I've got zero interest in having one. I've got no use for 20 LPI checkering, or magwells, or Novak sights, or polymer finishes, or... you get the idea. I don't care how nice it is; it just isn't my thing.
My dream 1911 is being put together by Ted Yost. It is EXACTY what I want. Those wants may not make much sense to anybody else, however. That's the beauty of custom guns, you aren't stuck with what other people think you should have. Is that the right way to go for everybody? No. Some people will be content with an off-the-shelf solution. Some people will want custom guns that are completely different from what I'm getting. If that gets you what you want, who cares?
Although, I have to admit that I feel a bit like Doctor Frankenstien as he's giving the monster an extra jolt of voltage to get it started. My old custom Delta pretty much fit into the mold of what everyone expects to see on custom guns; the only real novelty was that it was a Delta Elite. The one Ted has... well, it is going to be really different. Mua-hahahahahaha!

Total-no-holds-barred dream gun? Send a shoebox full of money to Vickers or Yost or someone and get something completely over the top. Maybe with one of those damascus Caspian slides, just to put the cherry on the sundae...

Funny thing with me was, when I went completely nuts and just spec'ed out EXACTLY what I wanted... the feature count actually dropped like a rock. My dream gun is going to be more GI looking in some ways than a stock Delta...can you say "spur hammer"?

Nope, have done that shoebox thing several times, no satisfaction at all in any of those. Frustration upon frustration.
Find a top end 1911 off the shelf that you can buy several copies of. Buy a rail car full of mags. Go to skul and be done with any silly shoebox dreams

Funny how perceptions and experiences can be so different... I got sick of allegedly "high end" off-the-shelf slag, and have been much happier with pistolsmith custom guns. Just don't have a red-assed baboon do the work and you will be happy with it.
More on topic: for an off-the-shelf gun (and I'm using that term real loosely), I'd say an Ed Brown Class A Limited. Great quality, the best parts, and lots of options. Or an SA pro if the feature set suits you.

Hmm, any decent one at this point! Looking at the Colt series 70's, Trojans and Kimber Custom Royals right now though.
