What large double-action revolver should I be shooting?

Personally I like Dan Wessons. Their blue finish is almost (if not as good) as nice as a Python's & they are supposed to be extremely strong. I would love to get one in 44 Mag. but they are pricey.

The problem is that once you start customizing a gun, the manufacturer and your expectations for their involvement are out of the picture. I wouldn't change anything, until you have shot the heck out of the gun and are sure it will be a good platform for customizing, while accepting that you will then be on your own. That said, I sold all but two S&Ws, and one of them, a $1000 Performance Center, is down for light strikes and will go back, but hopefully they won't notice that the forcing cone was recut (was off axis), and the throats were opened up.

I have a full lug unfluted gp100 I got from Talo by way of Davidson's. It is superior to the 686 I tried in terms of trigger but tbh I think there is no material edge one way or the other- both Ruger and Smith triggers are a crapshoot from what I've seen. Best trigger I ever saw was a model 10 (old) though so from a legacy perspective an old S&W probably does have an edge, those old guns were so well fitted.

If you want a NIB 357 and plan to do custom work I think the Ruger is the better host compared to the 686, it's more robust and there's no lock hole.
