You ever see a matchlock? Those things are heavy. I'll bet they'd be a LOT heavier if they were made of all metal.

Simple. For the same reasonS the spear, axe and other early tools did.

Add the fact that metal was expensive compared to wood as someone else noted and this is the easy answer to the question. All the subjective types of answers are just incidental.

Going back to single shot weapons (match, wheel, flint, or percussion type locks) were scaled down versions of shoulder fired ones. Wood was plentiful, cheap and met the requirements of a stock or grips.
