With all these options, which is the plain Jane P226???

The Nitron has the "Ergo" grips which I believe are a bit different than the grips on the MK25. And I don't believe they are interchangeable without buying some sort of kit that costs some bucks.
I noticed same thing: no Plain Jane version anymore. I guess Sig is into their "bling" phase for the 226. I just picked up a slightly used MK24 (same as MK25 but slightly different rail.) So you might want to go used. I rarely buy new guns anymore.
 
The nitron is essentially the "base" model now. It also happens to be the one I have. I find the E2 grip which it comes with to be very ergonomic and a definite improvement over the older 2 piece polymer grips.
 
Should be able to find a gunshop in your area that occasionally gets in the CPO ("Certified Pre-Owned) SIGs in the red box ... My idea of a basic P-226 is a W. German or German roll-marked model with stamped slide, the internal extractor and no rail ... They're still out there. These guns, being factory refurbished, seem to be commanding a premium now, and I'm seeing them go for upwards of $700.

In my area, lots of police trade-in 226s, frames marked "Made in Germany" but slides marked SIG Exeter NH, with milled slide, NO rail or WITH the rail, shorter external extractor, and often with night-sights with some life left ...I've found many lately in my region for $495 - $650, including some two-tone (stainless slide) models.

Top Gun Supply, as with several other internet dealers, gets these used SIGs in often.

It looks like the P226 Nitron is the "plain Jane" entry level P226 currently being offered. But I think the changes, like adding the rail and E2 grips, do add to the overall utility of the gun design. I have the E2 grips on my P229R and they are the most ergonomic factory grip I have ever found on a pistol.

Your basic P226 is definitely the P226 Nitron, but it does have the newer E2 slip on grips vs. the old screwed on polymer grips. As above, going used isn't a terrible option. I also have a Mk24 P226 Navy and love it dearly. For all intents and purposes it's the same as the Mk25, but with a standard Sig rail rather than a 1913 Picatinny rail. This also makes holsters readily findable.
 
I don't believe the grips are necessarily interchangeable without a "kit". Here is what I read somewhere:
"Q: How old of a 226 or 228 can one have to replace with E2 grips without modification?
A: It doesn't matter how old it is. If your pistol has the older long mainspring and metal seat, you will need to buy a new mainspring with the E2 kit."

Others can comments, as I am no expert on this; just mentioning it. Sounds like the newer model P226s may not have this issue.
 
I guess they just don't offer a plain 226 anymore.

The two closest to a "plain jane" 226R would either be the Nitron or the Combat.

The Combat comes with the standard grip panels, but it does have a colored frame.

The Nitron does come with with E-squared grip, but all you'd need to change over to the regular grip panels are the panels and the grip screws....the E-squared mainspring strut will work under the regular grips.

If the regular grips fit your hand, they actually offer higher hand placement on the frame
 
And of course there are plenty of aftermarket grips available. At some point, a 226 is a 226.
