I have checkered, stippled, and smooth, and like them all. The stippled one is my favorite. Very well done and feels great. I do prefer checkered over smooth, but it isn't a deal breaker.
The simplest way to try checkering on the front strap of an M1911 is to put a bit of skateboard tape there, cut so the edges are under the grip. Cheap and effective.

No, generally on the metal. I can tolerate vertical lines on an arched mainspring or backstrap, of an A1 model. Maybe some comfortable checkering or vertical lines on the front of the trigger guard, but I prefer smooth.
The OP does not address stippling, or vertical lines (as I am guilty of above).
Whatever is most comfortable to you, or whatever blows up your skateboard is OK.
