Wierdest is beaver. Seriously. We sometimes shoot them in the head with a rifle from a boat and skin them out. The backstraps are tasty. Best: Definitely elk.
 
Bison is excellent but pheasant if my favorite. Followed closely by turkey.

I reckon it depends on what you call weird. I've eaten plenty of turtle, frog legs, alligator but can't recommend baby octopus pickled in peanut oil. :barf:
 
There are small glands underneath the front legs(armpit) and at the base of the tail, not a big deal. Tastes as good or better than BBQ pork when done in the slow cooker.
 
somehow my gma could cook a coon where it was so delicous it beat any other meat ive ever eatin.wish i had paid more atenttion to how she did it.ive cooked it many times since she died and it was good but nothing like what she made.
 
BY FAR the best: Dall Sheep. Not gamey, almost sort of sweet tasting.

Weirdest: Caiman
 
I grew up on deer and elk and continue to fill my freezer with it, so it's really nothing special to me from a cullinary standpoint. I like the lean-ness of it.

Moose is good, and buffalo (bison) is really tasty too.

Pigeon did nothing for me.

Rabbit and Elk. Antelope is a close second. My wife cooked some javelina in the slow cooker, shredded it, and made tacos out of it. Those were delicious as well. It's been so long since I have had deer that I don't remember if I like it or not.
 
the liver from a just-killed young whitetail dry doe that's been feeding near a corn or soybean field or apple orchard. grilled w/onions
quail, grouse or mallard that has been feeding around a cornfield stubble
squirrel likewise around corn field
swordfish or trout - hard choice
any animal that's been feeding around farm/orchard area is going to be tasty. feral hog, coon, rabbit etc. even possum. squash field, peanut patch (feral hog will really tear this up), soybean or any bean, apple orchard, turnip or beet, corn etc. squirrels are really tasty around corn fields. love young ones fryed, dumplings, oh my. I'm gonna raid my freezer have around dozen left.

Favorite Freshwater Fish: Catfish......Southern Fried of Course!
Favorite Saltwater: Shark Steaks or Amberjack

Favorite Bird: Wild Turkey

Favorite Big Game: White Tail (Venison)
Favorite Small Game:Squirrel (Squirrel Dumplings)

Weirdest: Racoon....(Barbecued Racoon Legs) Guy I used to work with fixed em all the time....finally he got me to try one.....It was delicious! RIP old friend...miss him and his BBQ Racoon Legs.

Honorable Mentions...Crappie, Sun Perch/Blue Gill, Wall-eye Pike, Rainbow Trout, Large/Small Mouth Bass, Alligator, Rabbit, Pig, Bison, Lamb, Grouse, Dove, just to name a few.

Would like to try Turtle Soup?? maybe snake?
 
Favorite: Goat
Biirds: Goose, ducks. I hate them wild turkeys. (their meet is like chewing on a tire and taste too gamey
Weirdest: German Shepherd, frogs, beetles, crow
 
Big game: Axis deer

Bird: Quail (A nice grilled and BBQ glazed)

Small game: Rabbit

Freshwater fish: Walleye

Saltwater fish: Red Snapper

Strangest that I have eaten would probably be Fox....I don't recommend it, but if it's all you've got, it is tolerable.
 
Snapping turtle liver. Delicious! However, I've never been that hot on the meat, and I'm not gonna kill a turtle just for the liver, so the only time I have it any more is if someone gives me one 'cause they're afraid of it. It's color is a bit off when compared to beef liver, so some guys are afraid it's bad, so I jump on it...
