I voted blued, but that's strictly from an aesthetics standpoint. In my book, a blued 1911 is one of the most classic looking guns you're likely to encounter. To be honest, though, for a hard use gun (i.e. a carry piece), I'd give the nod to something like Robar NP3/NP3 Plus, Robar Poly T2 or Wilson Armor Tuff. Any of which is a much more resilient finish than bluing or parkerizing.
