I voted for blued, more for tradition's sake, but have a brushed stainless Ruger Commander that I like, a two tone Springfield EMP in a .40 (does that count?) and a park'd Rem Rand form 1943. Current object of affection from afar is the lightweight SR1911 bitone, but waiting for a range report.
Still kicking myself for ever selling the Series 70 Gold Cup, but that was long ago in a temporary moment of stupity.

For my dream custom 1911 that I'll get one day, I am going to start with a stainless gun, and then get it done in in NP3+, for the ultimate in corrosion and wear resistance.
 
Make mine Parkerized. I do enjoy the look of a blued 1911, and like to look at the high polished blued guns on the internet, but I wouldn't want to own one. My OCD would have me handling it in cotton gloves.

My parked 1911 is like an old pickup truck. Any scuff and scratch is just more character.
 
I voted blued, but that's strictly from an aesthetics standpoint. In my book, a blued 1911 is one of the most classic looking guns you're likely to encounter. To be honest, though, for a hard use gun (i.e. a carry piece), I'd give the nod to something like Robar NP3/NP3 Plus, Robar Poly T2 or Wilson Armor Tuff. Any of which is a much more resilient finish than bluing or parkerizing.
 
I have 2 black 1911's (1 Colt .38 Super and 1 Springfield Loaded) and a stainless Colt Defender, my concealed carry. Had another Springfield that I had cerrakoted Titanium blue with black VZ grips and all the parts cerrakoted black. Beautful gun, but I had loaned to my son to take to the range, but his truck was stolen, but it was recovered next day, but no gun.
 
I used to like two tones a lot but I have been changing into a bigger fan of a blued 1911 so thats what I voted
