1,000 Pound wild hog

I've been looking for the biggest hog I can find, to try out that whole "big ones don't have good meat" theory. So far, I haven't found it to be true. As the hogs get bigger, I'm finding it just means more good meat.

I don't think size makes as much difference as age and sex. I've killed and eaten three boars ranging fron 250 to 325 lbs (ironically the smallest of the three was the oldest, and he was mean, I believe he'd of eaten me if he'd had the chance). The meat (to me) has a different flavor than sows and young pigs, which taste like domestic pork. It isn't "bad" meat, it's just different, although some of the people I shared it with despised the taste (and it was tough). Most noticeable to me was the smell when cooking, which wasn't (to my purely subjective olfactory sense) exactly pleasant.

My understanding is that it tastes different because of the testosterone, which domestic pork doesn't have because they're castrated. Regardless, I'll bet there are very few people who if genuinely hungry would turn it down.
