What is required to change a 6.8 SPC upper to 5.56, if can be done? Barrel and...what else?

Absolutely can be done. The whole point to the designers of the 6.8 was to put a more effective round into the existing AR platform with a minimum of fuss. Barrel, bolt, mags.

A couple of weeks ago, I would have said that you should probably just get a 5.56 upper and keep your 6.8 intact, but you will probably find that a tad more expensive now than buying those few parts you need and rebuilding your upper.

The reason for the question was all I can find are 6.8 uppers. My luck, as lady luck would have it, I finally got my gun money 1 day after the panic buying started. Just looking at my options. I personally think a AWB is coming, so I want to get my upper before. Looking for a 300 AAC too, with that its just a barrel change.

Me, I'm collecting parts to build a 6.8 on a stripped upper I have. Nothing too special, it'll just be a 16" ARP barrel with a carbon fiber tube forend, and a 2-7 or so scope. Light, low recoil carbine for hunting.
