The 'Milsurp of the Month' in Guns magazine this month is the K-31. In the article, they mentioned that FNM (Portugal) is making brass, boxer primed 7.5 Swiss ammo. This ammo is mentioned as not up to the accuracy standards of GP-11, but is a good source of reloadable brass. Since I'd love to be able to handload for my K-31s, and Norma brass is pretty pricey. And shooting the bullets out of the casings is a more fun way to get brass anyway.
However, a quick search of the usual suspects failed to locate any for sale. Is this a new item that will show up if I wait a bit? Is it only found in Europe? Or have I just not looked in the right places?

I read a few posts on the Swiss rifle and straight pull rifle forums that basically said that ammo has pretty miserable accuracy.
If all you want is brass, why not just buy brass ?
I got 1000 cases from Graff's.
Before Graff's had it, I bought Norma factory ammo. Yes, it was expensive, but I had brass when I was done.
You can also use .284 Winchester brass. All you do is run it through your 7.5 Swiss full length sizing die and you are good to go.

Those ought to answer some of your questions and keep you busy for awhile.

I'd just spend the extra on GP-11. It's really great stuff. Probably the best ball ammo ever made by any military. They even put a special heat-absorbing/water resistant wax around the bullet's base!

The GP11 is REALLY good stuff. I have read posts by one of the gurus on one of those boards I listed that said it was more accurate than any handload he has tried.
However, it is expensive. I have been paying $39 for 60 rounds. I have heard of it being sold cheaper than that, but not around here.
So, handloading becomes the only real option, and GP11 doesn't give you boxer primed brass.

Before the Graf and Sons deal, I went in on a group buy with some guys at the Swiss Rifle forums for some really nice match brass straight from Switzerland. It cost me like $210 for 500. So I would jump on the Graf and Sons deal if I were you guys.

And yes that GP-11 is pretty darn accurate. K-31s are nice guns.
